How to dry mint

This year in my garden I grew four different types of flowers in order to attract bees. It worked. The bonus part is that two of the four flowers are also herbs which can be dried for tea. I love the duality of these flowers: first they help pollinate my veggie garden and then they give their life for me to enjoy throughout the winter. Such simple love.

Today I harvested a handful of mint leaves. Soon, I will harvest the lavender (it may or may not be growing out of control).

First, I snipped off the leaves that had no bug bites and had no brown spots. The rest of the plant gave its life to the compost bin.
I washed the leaves (oh they smell so good!).

I snipped off the flowers and will dry them too. Why not, right?!

Finally, I laid the leaves and flowers out in my dehydrator. I am drying them at 95 degrees for 24 hours. This winter I will use 1 teaspoon of dried mint per cup of tea! I love it!
